Which type of cake design is the most popular for weddings?
Right now, I am seeing a lot of simple, but very beautiful buttercream cakes. We are seeing all kind of icing textures and buttercream flowers. Many of our couples are incorporating in golds and rose gold, as well as fresh greens and flowers. I am just starting to see a move back into fondant cakes, but these often have a more modern feel than the buttercream cakes.
Once, I even had a couple who had a very formal, beautiful cake, but in the back they had me create a tiny Stay Puft Marshmallow man from Ghostbusters who was scaling the cake.
What is your favorite wedding cake design?
I love any design which reflects the couple. Simple, ornate, rustic, refined, as long as it makes them happy I enjoy making it.
I especially love when the design is fun and detailed with little things that make them happy. I love when they incorporate their pets into their design. Once, I even had a couple who had a very formal, beautiful cake, but in the back they had me create a tiny Stay Puft Marshmallow man from Ghostbusters who was scaling the cake.
Do you have any tips for brides that want to create their own wedding cake?
Pull together some inspiration photos, but don’t feel like you have to copy anyone's cake exactly. Bring in other things you are using for your wedding like lace from your dress, a design from your invite, perhaps a favor your sister is making. Wedding cakes are a great opportunity to get creative and do something unique.
What are some alternatives to a wedding cake?
We have had several couples celebrate with wedding pies! I love to make cakes, but just between us, I actually prefer to eat pie. Not a cake person? Try pies, cookies, brownies, even tarts!
What are some ways to save on wedding cakes?
If you select a smaller cake for cutting and then serve sheet cakes from the back, this can often save on decorating costs.
In our shop, the price of a cake is based on both the serving count and how ornate the design is. Sheet cakes, tend to be less per person because they aren’t getting decorated the way the tiered cakes are.
We don’t, however, make a distinction in our shop between faux tiers and real tiers, so replacing real tiers with faux ones usually does not have cost savings from us because the decorating is still quite involved.

What are some of the coolest cakes you have ever seen?
I LOVE the buttercream flower trend that came from S. Korea. These cakes feature insanely realistic buttercream flowers which are mind-blowingly delicate and gorgeous. You wouldn’t believe these aren’t real flowers and they lend themselves to very opulent arrangements (which don’t feel overdone because the flowers are so delicate). We love this style so much we invited one of the masters G.G. Cakraft to visit our shop for a private lesson.
What are some creative cake flavors?
I also just adore our passion fruit curd, in fact, I love it so much I recently used if on an episode of Netflix’s sugar rush as a component in one of our desserts. The Judges loved it!
I love anything fall flavored. We have a fabulous apple cake which is delicious with cream cheese icing or even caramel frosting. We do a lot of these during the fall. How big should a wedding cake be?
This is a tough one and there’s no simple answer or percent. Many caterers have little desserts they serve, so most people, frankly, don’t need a slice per guest unless they are having a plated dessert service.
At the end of the day, you know your friends, will they eat lots of cake, or maybe not too much? Do you just love the look of 2 tiers even though you are having 300 people? Go with that and get sheet cakes. It’s your day, so do what you think is best. Feel better having a slice for everyone? Get a big cake. Want extra for people to take home because you think the cake is so awesome people will be begging for more? Go for it!
